La Foret's classic dishes have long-term appeal.

 

Since late 2017, La Forêt, a beloved bastion of old-world elegance and superlative service, has been under new ownership, but brothers Maurice and Giuseppe Carrubba love preserving history (the building dates to 1848 as a boarding house for quicksilver miners). The same kitchen staff for over 30 years still puts forth iconic continental classics that made it an institution. Think escargot, Chambord-poached salmon, and tournedos of beef with chanterelles and ginger brandy. Game to impress with roasted elk loin, wild boar and venison, lobster ravioli and a bone-in ribeye have recently been added. Cap off the perfect evening with the famous Grand Marnier souffle.
